St. Patrick’s Day Punch & Mini Reuben Appetizers

Make this green punch for your St. Patty’s Day party this year, or if you are like me,I am going to use this recipe and surprise everyone at work this coming Friday!

Below I also included the best food ever, Reuben Sandwiches, in small size!

St. Patrick’s Day Punch

 

Time: 5 Minutes

Price: Under $15

Ingredients

  • 1 container Lime Sherbet (Medium Sized)
  • 1 {46 oz} can Pineapple Juice
  • 1 {2 liter} bottle Ginger Ale
  • 1 Fresh Lime (for Optional Garnish)
  • Key Lime Vodka (Optional)

Instructions

  • Add sherbet scoops to bowl and/or glasses
  • Pour in pineapple juice until about 3/4 full
  • Add about 15-20oz vodka (Optional)
  • Fill with ginger ale
  • Garnish with lime wedge (optional)

Mini Reuben Appetizers

Time: 20-40 mins

Price: $20-$40

Ingredients

 

  • Rye Bread-Pepperidge Farm Rye-Recommended
  • Corned Beef from the deli or cook your own
  • Swiss Cheese
  • 1 package cole slaw mix
  • 2 tablespoons Rice Wine Vinegar
  • Salt & Pepper to taste
  • Thousand Island Dressing
  • Sweet Pickles for garnish(optional)

What to do

  • Spray a cookie sheet with non-stick cooking spray
  • Preheat oven to 375 degrees
  • Place bread on cookie sheet
  • Top with a slice or two of corned beef
  • Add Swiss Cheese
  • Place in oven to heat through and melt the cheese, about 6-8 minutes
  • While the sandwiches are in the oven, prepare the cole slaw
  • In a small bowl, add the cole slaw mix, vinegar, salt & pepper, stir to combine
  • After the sandwiches are out of the oven, add a spoonful of cole slaw
  • Top with a spoonful of dressing and add a pickle for garnish
