Easy Fila Chicken Pockets

If you are looking to impress a date or your party guests this recipe may just do the trick.  I love to serve this when entertaining because it is  so easy and makes a pretty dish.



3/4 cup chopped green onion

3/4 cup mayonnaise

3 Tbl lemon juice

3 cloves garlic

3/4 tsp dry tarragon or thyme

2/3 cup butter melted

1 pkg. Fila dough

6 boneless chicken breast halves

Salt and Pepper

2 Tbl grated parmesan cheese

Pre-heat oven to 375 degrees

Mix together green onion, mayonnaise, lemon juice, 2 cloves of the garlic and the tarragon or thyme, set aside.  Combine remaining ingredients with the butter.  For each packet, place 2 sheets of fila on a cutting board and brush with about 2 tsp garlic butter.  Arrange a second sheet on top and brush it with another 2 tsp garlic butter.  Season chicken with salt and pepper.  Spread one side with mayonnaise mixture, turn over onto fila corner and top with more mayonnaise mixture, about 3 Tbl in all.  Wrap breast in fila dough.  Place on ungreased cooking sheet.  Brush with remaining garlic butter, sprinkle with parmesan cheese.  Bake 30 minutes at 375. Dough should be golden brown.


You may want to cut chicken breasts in half if they are very large.  This dish could also be made up as small appetizers.
