Gluten-Free Fried Shrimp

I am a big fan of fried shrimp and growing up near the Gulf Coast shrimp was always plentiful and I even had the  opportunity to go shrimping with my father. There is nothing better than fresh shrimp.  If you love fried shrimp but suffer with Gluten allergies this is a great modified Gluten Free Fried Shrimp recipe I think you will love.

 

 

 

Ingredients:

1 pound shrimp peeled and deveined

3/4 cup brown rice flour

1/2 cup cornstarch

1 Tablespoon paprika

2 teaspoons salt

1/4 teaspoon cayenne pepper

1/2 cup coconut milk

Cooking oil for frying

Instructions:

Soak the shrimp in the  coconut milk for at least 5 minutes.  Place the brown rice flour, cornstarch, paprika, cayenne pepper and salt in a large gallon size zip lock baggie.  Shake to mix well.  Add the shrimp and shake to coat.  Heat oil in a large skillet over medium high heat.  Adding a portion of the shrimp at a time, fry until golden brown.  Use slotted spoon to remove to a paper towel to drain.  Serve with your favorite cocktail or tartar sauce.
