Savory Tuna Melts

Tuna Melts are a quick and easy lunch or dinner fix ready in 20 minutes.  I think you will enjoy this perked up version of the classic that is sure to have them begging for  more.







2 6 ounce cans solid white tuna packed in water, drained

1/4 cup celery chopped finely

2 scallions chopped finely

2 tablespoons chopped parsley

2 teaspoons apple cidar vinegar

1 tablespoon whole grain mustard

6 tablespoons mayonnaise

1 tablespoons prepared  horseradish

4 large slices french roll toasted

8 slices  Havarti cheese

2 tomatoes sliced


Preheat oven to 475 degrees.  Mix 4 tablespoons mayonnaise, tuna, celery, scallions, parsley and vinegar in a large bowl and mix well.  Season with salt and pepper.  Combine remaining mayonnaise with the mustard and horseradish in a small bowl.  Spread on the bread slices and arrange on a baking sheet. Spoon the tuna mixture on top.  Slice the Havarti cheese in 1/2 and place across tuna.  Salt and pepper tomato slices and place on top of cheese.  Take remaining havarti cheese slices and top tomatoes. Bake until cheese is melted.  Serve with your favorite pickles or chips.
