Spinach Salad Covered In A Warm Bacon Dressing

Warm Spinach Salad

I am not a big lover of cooked spinach, but give me a Spinach Salad with a warm bacon dressing and I am in heaven.  This is a quick and easy version with a little bit of a twist and  ready in 20 minutes.





1/2 pound bacon  rough chopped

1/4 cup white wine vinegar

1 teaspoon of honey

1 teaspoon dijon mustard

2 tablespoons extra virgin olive oil

1 pound spinach washed and dried stems removed

1/2 red onion thinly sliced

2 cups red seedless grapes, halved

4 ounces crumbled blue cheese

Salt and Pepper



Cook bacon over medium heat until crisp, stirring occasionally.  Drain on a paper towel. Save the bacon drippings in the skillet.  Whisk the vinegar, honey and mustard along with 1/4 teaspoon salt and pepper in with the drippings.  Whisk in the  olive oil until emulsified.  Place the spinach in a large bowl and pour the warm dressing on  top.  Add the grapes,onion, cheese and reserved bacon and toss  well.  Season with Salt and Pepper.  Top with croutons.

Note: You can substitute strawberries or rasberries for the grapes and add pine nuts instead of croutons.
