Quick and Easy Beef Enchiladas

Easy Chicken Enchiladas

I tried this quick and easy enchilada recipe on my family.  They loved it and the great part was I had it ready to serve in 30 minutes. When you work all day quick and delicious meals are important.  It’s flavorful and filling and my husband gave me an A for this dish.






1 pound ground chuck

1 small onion chopped

1 medium can mild enchilada sauce

1 can tomato soup

1 pkg. flour tortilla taco shells

3 cups mexican cheese mix (Jack/cheddar)

Sour Cream

Salsa Sauce


Saute beef and onions together until meat is done and onions tender.  Drain off excess grease.  Stir in soup and 3/4 of enchilada sauce into the meat mixture.  Cook for about 5 minutes.  Oil bottom of 13 x 9 inch baking pan. Spread about 1/4 cup meat mixture onto each tortilla, top with some cheese.  Roll up tortillas and place seam down in the pan.  Continue until all shells are filled and rolled.  Top tortillas shells with remaining meat sauce and enchilada sauce.  Cover sauce with cheese.  Cover and bake for 20 minutes at 350 degrees.  Top each serving with a dollup of sour cream and salsa sauce.

Note:  I used whole wheat tortilla shells and baked my dish uncovered for 20 minutes.
