Tropical Mahi Mahi

I have never been great at cooking fish, so when I find a recipe that is easy and delicious I get excited.  This is one of those recipes.  Simple ingredients and very easy to prepare. This makes a very pretty presentation if you are  looking to impress.  A simple tropical salsa served over seared Mahi Mahi.  A very mild but flavorful fish.





4 mahi mahi fillets

3 tablespoons olive oil, divided

1/3 cup flour



1 avocado, peeled and diced

1 cup chopped orange

1 tablespoons chopped red onion

2 tablespoons chopped fresh cilantro

2 tablespoons fresh lime juice


In a small bowl combine the avocado, orange, red onion, cilantro and lime juice.  Set aside.

Combine the flour, salt and pepper in a shallow dish.  Brush fillets with 1 tablespoon of the olive oil.  Place the fillets in flour and turn to coat, shake off excess.  In a large nonstick skillet heat remaining olive oil over  medium heat.  Add fillets to skillet and cook 5-7 minutes on each side until fish flakes easily with a fork.  Top with salsa and serve with your favorite sides
