Honey Lime Shrimp

Shrimp is probably one of my all time favorite foods and one of the easiest to prepare.  This is a wonderful recipe Honey Lime Shrimp and the  combination of the lime and honey give this just a slight irresistable tang leaving savoring for more.  The shrimp are prepared in a pan, but you could grill these little jewels and still have a great dish served over brown rice.

 

 

 

 

 

 

Shopping List:

1/2 to 1 pound of large peeled and deveined fresh shrimp

1/4 cup olive  oil

2 Tablespoons honey

Juice of one lime (2-3 Tbl.)

2 cloves of garlic smashed

1/2 tsp. Kosher salt

1/4 tsp. Black pepper

1/4 tsp. Red pepper flakes

Preparation:

Take a large zip lock bag and add all the marinade ingredients.  Mix well.  Add the shrimp, seal the bag, releasing as much of the air as possible from the bag.  Refrigerate for 45-60 minutes rotating the bag several times.  Remove shrimp from refrigerator and let come to room temperature for about 15 minutes.  Heat a large skillet over medium heat. Add shrimp to pan in single layers and do not over crowd the skillet.  Cook on one side for 1 minute until they begin to  curl and start to turn pink.  Turn them over and cook for about another 30-45 seconds more. (Do not over cook)  Remove from pan and serve over brown rice.
