Mini Monkey Bread Muffins

My family has always love it when I make Monkey Bread for them and I usually service on Christmas morning and it’s gone before you know it.  I saw this version for Mini Monkey Bread and thought it was a great idea.  I might even get some this time.  This recipe is so easy and economical to make.

 

 

 

 

 

Ingredients:

4 Packages Buttermilk Biscuits ( or Rhodes dinner rolls thatwed

6 tablespoons butter melted

2 tablespoons corn syrup

1/2 cup brown sugar

2 teaspoons cinnamon

Icing:

1 cup powdered sugar

1 tablespoon melted butter

1-2 tablespoons milk

1/2 teaspoon vanilla

Directions:

Cut each roll or biscuit into 4 equal pieces.  In a bowl, combine the melted butter and corn syrup an stir until mixed.  In a separate bowl, combine the sugar and cinnamon and mix well.  Dip the pieces in to the butter mixture, just a few at a time, and then in the sugar mixture.  Place four pieces in each well in the muffin tin. (Prepare tins with non-stick spray.  Repeat with remaining pieces.  Bake at 350 degrees 20 minutes until tops are lightly browned.  Cool 3-4 minutes and then remove from pan.  Mix icing ingredients and drizzle over the monkey bread.  Enjoy this wonderful recipe.
