Healthy Mac and Cheese

mcMac and cheese is usually a crowd-pleaser among any age group. But if you’re into healthier diets, it’s probably not a good idea to add it to your meal plan.

Or is it?

Believe it or not, there’s actually a way to “healthify” your favorite cheesy dish by using cashews and nutritional yeast (it provides the cheesy flavor) for the cheese sauce, so you can enjoy it without ruining your diet with fattening real cheese!


Here’s what you’ll need:

-1 1/2 cups raw cashews
-3 tablespoons lemon juice
-3/4 cup water
-1 1/2 teaspoons sea salt
-1/4 cup nutritional yeast
-1/2 teaspoon chili powder
-1/2 clove garlic
-pinch of turmeric
-pinch of cayenne pepper
-1/2 teaspoon mustard (dijon or yellow)
-organic quinoa pasta shells

Get a pot of water boiling and cook your pasta according to the specified instructions. While you’re waiting, throw the rest of your ingredients into a blender and process until you get a thick, creamy sauce.

When the shells are cooked, drain the water with a strainer then return the pasta to the pot and add the sauce.

Stir the shells and sauce together until properly combined.

Optional: You can add some broccoli (steamed or boiled) for some extra nutrients!
