Zombie Halloween Cupcakes

zombiecupcakeHalloween is just around the corner, and if you’re planning on throwing a Halloween party for your friends, these Zombie Halloween Cupcakes would make the perfect dessert!

Seriously, you need to make these cupcakes for your guests.




Here’s what you’ll need:

Cake batter

-1 cup + 2 1/2 teaspoons all-purpose flour
-1/4 cup + 3 3/4 tablespoons cocoa powder
-1 1/4 teaspoons baking powder
-1/2 teaspoon baking soda
-1 teaspoon ground cinnamon
-1/4 teaspoon ground nutmeg
-1/4 cup + 2 1/2 teaspoons buttermilk
-1/2 cup + 1 tablespoon + 1 3/4 teaspoons pumpkin puree
-1/2 teaspoon vanilla extract
-2.25 ounces unsalted butter, softened
-1/2 cup + 1 tablespoon + 1 3/4 teaspoons dark brown sugar
-1/2 cup + 1 tablespoon + 1 3/4 teaspoons granulated sugar
-2 large eggs

Oreo topping

-7 finely crushed Oreo sandwich cookies
-6 Oreo Fudgees sandwich cookies, pulled apart and filling removed

Chocolate buttercream frosting

-1 stick unsalted butter, softened
-1/2 cup unsweetened cocoa powder
-4 cups confectioners’ sugar
-1/4 cup milk
-1 teaspoon vanilla extract
-Halloween-themed cupcake liners

Preheat the oven at 350 degrees F and line a muffin tin with cupcake liners.

Sift your flour, cocoa powder, baking powder, baking soda, cinnamon and nutmeg in a bowl, and combine buttermilk, pumpkin and vanilla in another bowl. Set aside.

Beat butter and the two kinds of sugar together in a large bowl until fluffy.  Add the eggs one at a time, beating the mixture after each egg until smooth and light.  Next, slowly (and alternately) add the flour mixture and buttermilk mixture to the bowl–blend well.

Once the batter is well blended, spoon evenly into your cupcake liners.  Place in the oven and bake for 18 to 22 minutes.

While waiting for the cupcakes to bake, make your frosting. Beat the butter and cocoa until smooth, then add your confectioner’s sugar one cup at a time, making sure to beat well after each cup. Finally, add the milk and vanilla and beat for about three minutes.

When your cupcakes are done, cover each one with frosting and dip in crushed Oreos.

And finally, decorate! Stick one half of an Oreo Fudgees sandwich cookie (for the tombstone) and one zombie hand cupcake topper in each cupcake for that “zombie rising from the dead” look.
