Homemade Coconut Yogurt

yogurtIf you eat yogurt by the bucketful (because who doesn’t?) at home, it can get pretty expensive. So why not make your own homemade yogurt instead?

This recipe makes a delicious, creamy yogurt that’s great for anyone who’s on a dairy-free diet, since it doesn’t use any milk.

Here’s what you’ll need:

-2 cups young coconut meat
-2 probiotic capsules (use powder, discard capsule) or ¼ tsp loose probiotic powder
-¼ cup coconut water or filtered water

Toss all ingredients (make sure coconut meat is chilled or even slightly thawed after being frozen) into a blender or food processor and process until you get a smooth and creamy texture–use more or less coconut water/filtered water depending on the consistency you want.

Pour into a container, but make sure to choose one that is large enough to allow the yogurt to expand–preferably a mason jar with a lid.

Replace the lid on the jar and place in a warm place for 6-12 hours.

Refrigerate and serve.
