Raw Vegan Cherry Coconut Fudge

cherry coconut fudgeIf you’re a fan of cherries and coconut, then this Cherry Coconut Fudge recipe for is for you. It’s easy, and healthy, too!

-2 tablespoons coconut butter
-2 tablespoons cocoa powder
-1/2 a medium banana (very ripe)
-1/16 teaspoon salt (add more if peanut butter is unsalted)
-red glace cherries
-shredded coconut
-maple syrup or stevia to taste (optional for those who like things a little sweeter)

Throw all ingredients (except cherries and coconut) into a food processor or blender and process until you get a smooth, creamy texture. Scoop your batter into a bowl and gently fold in cherries and shredded coconut.

Transfer the batter into a rectangular plastic container or baking pan and smooth out the top. Add more cherries and coconut on top if desired.

Place in the freezer until it firms up, then cut into little square pieces.
