Healthy Carrot Cake Cupcakes

carrot-cake-cupcakesEaster is almost here, which means everyone will soon be munching on egg-shaped chocolates and adorable bird-shaped marshmallows. Not exactly the best holiday to celebrate if you’re trying to cut back on the sugar now, is it?

If you want to enjoy Easter without overdosing on the sweets, try these delicious (and nutritious) healthy carrot cake cupcakes for a more fulfilling, guilt-free sweet snack to serve to your family and friends.


Here’s what you’ll need:

-2 1/4 cup oat flour
-1 teaspoon baking powder
-1 teaspoon baking soda
-1 1/2 teaspoon cinnamon
-1/4 teaspoon allspice
-1/4 teaspoon nutmeg
-1/4 teaspoon salt
-1/2 cup Greek yogurt
-2 eggs
-1/4 cup coconut oil
-1 teaspoon vanilla extract
-1/3 cup almond milk
-1/4 cup coconut sugar
-1/3 cup stevia
-1 cup shredded carrots
-1/2 cup shredded zucchini
-1/3 cup crushed nuts or raisins (optional)

Cream Cheese Frosting:

-4 ounce reduced fat cream cheese
-1/2 cup Greek yogurt
-1/4 cup powdered sugar or stevia
-1/2 teaspoon vanilla extract

Combine your dry ingredients (the first seven listed ingredients) in a bowl. In a separate bowl, combine all your wet ingredients (Greek yogurt, eggs, coconut oil, vanilla extract, and almond milk). Mix in coconut sugar and stevia, then slowly add your combined dry ingredients into the wet mixture.

Once your batter is properly mixed, fold in your carrots and zucchini. If you’re adding nuts and raisins, fold them into your batter as well.

Preheat your oven to 350 degrees F and place cupcake liners in a cupcake/muffin pan–spray a bit of cooking spray in them so the cupcakes won’t stick.

Spoon your batter into the cupcake liners and bake for 20 minutes.

While waiting for your cupcakes to bake, mix the ingredients for your cream cheese frosting in a bowl. You can use a hand mixer to make this easier.

When the cupcakes are done, spread frosting on top of each with a spoon or bread knife. Sprinkle with some toasted coconut and top with colorful chocolate candy eggs to make them extra festive!
