Healthy Cookie Dough

healthy cookie doughFor those of you who areĀ fond of cookie dough but not quite as fond of catching salmonella from eating raw egg, here’s a healthy cookie dough recipe that is not only perfectly edible, but also totally healthy!

Here’s what you’ll need:

-1 can of chickpeas (rinsed and drained)
-1/4 cup raw peanut or almond butter
-1/4 cup honey or maple syrup
-1 teaspoon vanilla extract
-cacao nibs or dark chocolate chips (70% cacao)

Blend the first five ingredients in a food processor until you get a smooth dough. Once that’s done, scoop the mixture out and into a bowl, then slowly fold in your cacao nibs or dark chocolate chips–you can add as many as you want, so have at it!
