Vegan Ricotta Cheese Dip

vegan ricotta cheeseYou don’t have to be vegan to enjoy this creamy Vegan Ricotta Cheese Dip. Even the pickiest, most anti-vegan or anti-anything healthy friend or family member you know will still enjoy the tangy deliciousness of this dairy-free “cheese.” Use it as a dip for your favorite veggies or use it as a vegan substitute for almost any recipe that calls for ricotta–like lasagna!




Here’s what you’ll need:

  • 1 cup pine nuts
  • 2 tablespoons lemon juice
  • 1 tablespoon water
  • 1 scallion (green and white parts), minced
  • 1-2 teaspoons fresh thyme
  • ΒΌ teaspoon celtic sea salt

Soak your pine nuts overnight. When you’re ready to make your vegan ricotta cheese, take the soaked pine nuts and remove the soaking water. Rinse them under cold water in a strainer, then make sure to drain all the water before placing in your food processor. Add your lemon juice and water, then process all three ingredients until you get a smooth texture. If it won’t blend as well as you’d like, add a bit of lemon juice and process some more.

Add the rest of your ingredients and process for a few more minutes, until you get a ricotta-like texture.
